Since 1815, the Billaud-Simon domaine has laid claim to almost 17 hectares of vineyards in the Chablis wine region of Burgundy spread out over a two-kilometre radius of both banks of the Serein river, an area where Chardonnay thrives. With that in mind, it makes sense that the winemaker’s Chablis Grand cru Les Preuses is blended from 100% chardonnay grapes. Both minerally and floral at the same time, it swirls with notes of citrus, honey and dried fruits.
