What’s the story behind this Riserva red wine from Giacomo Borgogno & Figli? Filled with Nebbiolo grapes from the Barolo region, it begins with spontaneous fermentation in cement tanks, followed by a submerged cap maceration (up to 50 days) before aging in big Slavonian-oak barrels for six years and enjoying six more months in a bottle before being released to the market. Pretty neat, eh?
