Selfridges' new 'On The Roof' summer dining concept kicks off with Des McDonald's Q restaurant which provides a delicious selection of late breakfast, lunch, dinner and afternoon tea menus with a 'raw, grill & smoke' focus. From breakfast in the covered conservatory to a sun-bathed al fresco lunch, we're taking summer dining up a level (or five).


The London restaurant scene is at the top of its game right now, how does On The Roof With Q
stand out?

On The Roof With Q stands out for various reasons. Firstly it sits on top of London's premier department store. Also, we have installed a summer conservatory with a fully retractable roof for our customers to enjoy the sun or shelter from England's summer rain.

There's a trend for reviving traditional BBQ and smoking methods — why do you think this is?

Smoking, BBQing and grilling in general have always been popular cooking methods. 'Slow and low' has been developed through the ages, from when native Indian Americans cooked hunted meat for days in a charcoal hole in the ground.

How would you describe the menu at On The Roof With Q?

The Q menu reflects the season; we open with juices, pastries and coffees for breakfast followed by light grills, superfood salads, savouries and afternoon tea. We even have our friends JJ Fox on our cigar terrace.

Why can't we get enough of rooftop bars and restaurants?

I think we Londoners love rooftop bars and restaurants for two reasons. Firstly, London has dramatic architecture and a diverse skyline day or night, plus any chance to enjoy some great weather and we all just want to be outside.

Hot Smoked Salmon, Jersey
Royals & Horseradish

80g hot smoked salmon
2 quail eggs (soft boiled
for 2 minutes 45 seconds)
100g cooked jersey royal potatoes
20g mayonnaise
15g horseradish cream
10g fresh horseradish (grated)
5g chives (finely chopped)
10ml lemon juice
15ml olive oil
20g seasonal salad cress
Salt & pepper

Firstly lightly crush the jersey royals with the back of a fork in a bowl (it's best to do this while they are still warm) add the mayonnaise, creamed horseradish, chives and half of the fresh horseradish, gently mix and season with salt and pepper.

Spoon the jersey royals onto a plate and gently flake the room temperature salmon over, add the halved quails egg, season with salt and pepper.

Dress the cress with olive oil, lemon juice and seasoning, scatter over the dish. Enjoy.
