It focuses on fine ingredients and artisan production methods to create offerings like this air-dried Coppa: which, if you’re not familiar, comes from the collar of the pig to ensure a perfect meat-fat ratio. This version of the traditional Italian cut is seasoned with pepper, coriander, garlic, and nutmeg, then dry-aged for three months.
