At the beginning, Y de Chateau d'Yquem was produced on an irregular basis, blended from the last bunches of grapes left on the vines after the vineyard’s initial harvest. Since 2004, however, the Domaine has released bottles every year, making a conscious decision to pick only perfectly ripe Sauvignon Blanc grapes at the beginning of the vintage which are then blended with Sémillon at peak ripeness – although the final blend and balance of grapes is decided after tasting.
