The Poacher’s relish from Patum Peperium was created in 1828 by John Osborn who had a penchant for decadent preserves. Generations later it would seem that he’s not the only one as his smoked salmon relish is still making an appearance in our larders. Sprinkled with spices and with a lemon twist, it’s made to be spread on toast, crackers or blinis at your next canapé party.
