On a visit to farms of the brand now known as The Wasabi Company, a chef mentioned to the founders that its watercress was grown reminded them of the conditions required by wasabi. It made them think—could the traditionally Japanese-grown ingredient thrive in the UK? Years later and the label now offers an extended range that includes these Somen noodles. Made from wheat, they’re flavoured with yuzu to bring an aromatic tang to hot and cold dishes.

Artisanal somen noodles with the aromatic and complex flavour of yuzu. Handmade over two days using only wheat flour, salted water and yuzu powder they are best served cold with a dashi or soy dressing.
Cooking is a delicate process best undertaken as follows:
• Immerse the somen in 2L boiling water
• Stir gently for 4 minutes until translucent
• Taste to check the texture
• Remove from heat and transfer to a colander
• Rinse with very cold water, stirring gently
• Drain
• Enjoy within 5 minutes of rinsing for optimal flavour and texture.
