A passion for wine has been flowing through the Pato family ever since the 18th century, and that hasn’t changed Luis Pato. The nonconformist grower (who bottles different varieties from a single vineyard by harvesting at different times of the year) chooses end-of-August Baga grapes for this red. Matured for 12 months in new and old Allier oak casks, its punchy oak, earthy and spicy notes pair best with gamey meats, and cured sheep cheese after 10 years in the cellar.
