Dewazakura is one of the most innovative of all sake producers, having dramatically changed the domestic market for sake with the introduction of their high quality, affordable ginjo and daiginjo styles in 1981. They have also perfected a cold storage technique, whereby freshly made sake is kept at 28 degrees Farenheit, in order to keep it as aromatic and flavourful until bottling. This is the sake that started it all for Dewazakura, with notes of crushed flowers, pears and melon. Best served chilled, this is the perfect match for white fish sushi or sashimi.
