At Domaine Pattes Loup they are using cement 'eggs' to ferment a proportion of their wines. These strange looking tanks are said to help the fermentation process by removing any 'dead' cold pockets that traditional tanks have. The wine gently circulates creating very balanced wines with fantastic texture.
