One of the oldest cheesemongers in England, Nottingham-based Paxton & Whitfield has been sourcing and manufacturing cheese for over 200 years. A famous partner for port, this half baby stilton is ripened and then left to mature for an additional twelve weeks for a more creamy and mellow flavour with a buttery aftertaste designed to melt in your mouth. All you need now is some crackers, fruit and a roaring fire before settling down for the evening.
