Leduc-Piedimonte have taken that one step further and used the same methods to create an ice cider. There’s a reason it’s so unique to Quebec; its success depends on both an abundant crop of quality apples, and winter temperatures that plummet below 25°C. The overripened fruit, concentrated by the cold, results in an intense, complex tipple with a perfect balance of sugar and acidity.
