Made from 8-year-old agave Espadin, it passes through a meticulous process before reaching the bottle: five days of cooking and up to thirty days of fermentation, followed by double distillation in copper stills. It’s worth each painstaking step because the result is delightfully drinkable, with notes of soft smoke and fresh peach.
