This Pouilly Fume take its name from the soil the Sauvignon Blanc vines are grown on in the St Andelain commune: flint, or “Silex” in French. When he was alive Didier Dagueneau stood out as one of the few winemakers who chose to age their Sauvignons in oak barrels – when it comes to this bottle the grapes are fermented and aged in oak demi muids ones. The result is an intensely flavoured wine swirling with quince, elderflower, citrus and spice aromas designed for ageing.
