JJ. Corry distillery strives to “respect tradition but embrace change”. This ethos guides Louise McGuane on her mission to revive the lost art of Irish whiskey bonding. The traditional procedure involves sourcing promising new-make spirits and maturing them in unique casks from around the world. This 16-year-old single malt is made via that process; it’s aged in ex-bourbon casks, which gives it a sweet and light aroma, with peaches and vanilla on the palate.
