Patrice Hinds inherited his love of cooking from his mother – he remembers her Guyanese dishes full of “flava” and this inspired him to launch Pat & Pinky’s (the latter in homage of his mum’s nickname). Ready to transform your own dishes and infuse them with plenty of flavour, the Aubergine Plantain chutney is completely vegan and marries its namesake ingredients with a hint of chilli to lift everything from crumbly slices of cheese to sandwiches to another level.
