Kingsbarns’ new Doocot whisky takes its name from the dilapidated dovecot discovered at the heart of the label’s Fife distillery, which is built on a renovated farmstead. Once a home for doves and pigeons, the historic building now houses the Scottish distillery’s first-fill cask from 2015. Matured in ex-bourbon barrels and red wine barriques, this single-malt Scotch is intensely fruity, brimming with vibrant notes of pineapple syrup and summer berries with a hint of rhubarb.
