Founded by former biochemist David Perkins, High West found its roots after David visited a whiskey distillery in Kentucky and noticed the parallels between his own work and the fermentation process of the drink. It was then, in 2006, that he decided to begin a new venture into the world of scotch and bourbon. Today, the distiller crafts expressions like this Prairie iteration that opens with notes of light caramel before giving way to a rich earthy palate that finishes with vanilla and a hint of apple.
