Two of René et Vincent Dauvissat’s vineyards have been awarded “grand cru” status: Les Clos and Les Preuses. Naturally grown and farmed on the first, the Chardonnay grapes blended to produce this 2002 bottle of Chablis are harvested by hand and left with their stems to undergo spontaneous malolactic fermentation while élevage takes place in six to eight-year-old oak barrels. Unaffected by the oak, the flavour marries sweet honeyed notes with nutty praline and citrus zest.
