This Banana Peel rum was a happy accident for Discarded Spirits Co. Originally, the brand was looking to use the rum as a way to deepen the flavours of its whisky by pouring it into empty casks before final maturation. It’s then normally disposed, but it’s an underappreciated Caribbean spirit that’s deserving of some love – especially when the banana peel adds toffee notes and a fruity balance into the mix. Try sipping it neat over ice, shaken in a Daiquiri or mixed long with ginger ale.
