Benham & Froud revive the fortunes of the British company that made the "Rolls Royce of jelly moulds" during the wobbly dessert’s heyday in the 18th and 19th centuries. Its logo is an orb and cross – due to the fact that as well as making copper moulds, the original brand also replaced this feature on St Paul’s Cathedral. Flavoured with British blackcurrants, these artisanal jelly cubes are designed to be used in showstopping centrepieces and sweet morsels alike.

Place cubes in a microwaveable measuring jug and microwave for 30 seconds (at 800w) or until just melted. Top up to 600ml with
water, stir, and pour into a jelly mould. Refrigerate for at least six hours to set before unmoulding. Serves six.
