Taken from the same part of pork leg as culatello and culatta, the one hand-tied by Terre Ducali is seasoned with a sprinkling of salt and crackling black pepper. Left to mature in natural cellars for eight months to allow it to develop its distinctive intense aroma and sweet flavour, it’s packed and whisked to your door. Thinly slice it and serve on the side of sparkling wines as an aperitif.
