The Akashi sake brewery dates back to 1867, when the company produced soy sauce and traded in rice. Now it produces and sells a wide variety of products from premium sakes to varieties of distilled spirit shochu. This sake is waxy and woody in style, with some pink grapefruit character and a touch of cream. The flavour continues to mellow over time.
