A joint venture between the Copenhagen-based Nordic Food Lab and the Cambridge Distillery, the Anty Gin is a unique first: Formica rufa, the red wood ant, is found in forests around the Northern Hemisphere and is rich in formic acid, serving as an agent for producing various esters. Through distillation of these ants, it’s possible to explore the universe of these molecules and reactions, and to capture the flavours of this fascinating species. Each bottle of Anty Gin contains the essence of approximately sixty-two wood ants. To support the distinctive flavour of the wood ant distillate and Bulgarian juniper berries, wild springtime botanicals have been selected to add complexity to the blend: wood avens, nettle, and alexanders seed.
