Winemaker Raul Perez is one of the current superstars of Spanish wine with consultancies and projects all over the country. His latest project is this Ultreia de Valtuille, a Mencia variety that's bottled without fining or filtration to maintain the integrity of the grape's character. Red and characterful, and pairing perfectly with veal and game meats, it boats a medium acidity with floral, oak and chocolate on the nose.
