For a
Crane cast iron dish... a good lug of olive oil, one diced onion and two finely-chopped cloves of garlic. Once they've softened, add diced pancetta. Then get your greens - chard, spinach, cavolo nero, whatever - add them in banches to the pot, adding stock as you go. A few sprigs of rosemary or thyme if you like. Once the greens are nearly cooked, add (pre-cooked) cannellini beans and let simmer. Finish with some grated pecorino.
