Gully's famous paneer rice box

Specialising in delicious, home-cooked North Indian street food (think masala fries and samosa chaat), Gully was set up by father-and-son duo Sudhir and Avi Sethi. Their combined passion for great flavours, and Sudhir’s talent for making delicious Indian food, culminated in the UK’s first Indian street food truck, where you can order your favourite food and play Mario Kart on a built-in games console while waiting.

What inspires your recipes?

My dad comes from Indian heritage, and was born in Uganda and raised in England, so he tries to bring all the elements of his history into his cooking.

What’s a key ingredient you’d never not use?

Cumin – it’s the best.

What's your favourite dish to make?

Our Samosa Chaat (it went viral on TikTok last year). Although, most of our customers would say our signature Chicken Tikka Naan Wrap – it’s a fan favourite, which can be enjoyed with some exciting masala fries and washed down with a refreshing mango lassi.

What tips would you give on making the best Indian food?

The main ingredients you need when cooking a great curry are patience and music. Then, let your artistic talents flow: cook how you think it should be – there is no right or wrong way.

What are you looking forward to the most at the Selfridges Christmas Market?

Engaging with customers, listening to their stories and ensuring they leave with a full belly and a big smile! The best part of street food is the live experience, always.

Delicious fried squid and chips and a seafood burger from Calamari Canteen

Starting out with a food blog and some magazine articles, husband-and-wife duo Billy and Kayleigh Jarvis have always loved food (especially crispy squid). Branded under ‘Cocktails and Calamari’, the team started out at local markets in a gazebo, before buying a food van and starting Calamari Canteen for real. Join them to dig into freshly made crispy squid, seafood burgers and fries.

How did you get into the street food business?

One day, in 2019, Billy decided to book a trader spot at the Essex Food and Drinks festival. We had no set-up, equipment, branding or social media – it was a whim, but it worked! We did it, served hundreds of people – with the help of a few willing friends and cheap fryers – and we loved the rush. Then we joined KERB, did London Christmas markets, got our brilliant graphic designer friend (Katherine Pearce) to brand us up, and we bought our own van.

How do you find your recipes?

We come up with all our recipes ourselves. Kayleigh loves the creativity of coming up with dishes for events, the van and pop-ups. There are lots of scribbles and ideas in notebooks around the house. Calamari Canteen and our sister brand, Bait Restaurant, keep our creative minds going.

What fun stories do you have from your food truck?

For us, the fun part about working in street food is the community of other traders around us. Come rain or shine, the laughs and chats keep us all going.

What are you most excited about at the Selfridges Christmas Market?

We have been to a lot of east London events and markets, and it will be great to chat to new customers and get our food out to new people in central London. We love Christmas and can’t wait for the lights, atmosphere and cheer around the market – and, of course, trying out all the other traders’ food, too!

London's finest vegan hot dogs by Popdogs

Born out of a passion for music and entertainment (and the idea of being able to hold a drink in one hand and a hot dog in the other), Popdogs was the brainchild of Monty Bhurjee. After a wet winter’s night in 2013 at east London’s legendary Vibe Bar, he decided to create the perfect 100% plant-based hot dog…

How did you get into street food?

My mother was a whizz in the kitchen when it came to fusion cooking, and I was very fortunate to have such a diverse diet growing up.

How do you find your recipes?

We travel around the world frequently and basically just eat as much as we can! Our menu is inspired by all the different foods we experience.

What are you excited about the most at the Selfridges Christmas Market?

There’s something pretty special about Christmas in central London, so we’re most looking forward to the atmosphere. Selfridges is one of the best shopping destinations in London, and we can’t to take in all the festive energy and cheer!

Decadent hot chocolates by Chin Chin Ice Cream

Ahrash and Nyisha set up Europe’s first liquid nitrogen ice-cream parlour in London in 2010, before buying a 1970s postal truck from LA in 2015 to get their ice cream on the road. Describing themselves as an innovative indie dessert brand, their sweet treats will get everyone talking…

How did Chin Chin Ice Cream start?

We both left our city jobs and wanted to do something creative, so we retrained in pastry and travelled to get inspiration. With a shoestring budget, we took on a shop in Camden and made a little ice-cream lab, which is still going strong 11 years later! We honed our craft and lucked out with wonderful regular customers.

What do you make?

Liquid nitro ice cream, killer hot chocolates, cherry pies, party cakes, and indulgent puds like sticky toffee and griddled cookie dough. We’re excited to be launching our new cookies at the Selfridges Christmas Market, where we've reimagined some of our signature liquid nitro ice-cream flavours in the form of hot cookies.

What are you most excited about at the Selfridges Christmas Market?

Selfridges sets the trends and is always pushing things forward, so there's a natural synergy for us to be there. More importantly though, after the last couple of years we've all had, we're super-excited to fully immerse ourselves in the spirit of Christmas and finally spread some festive Chin Chin cheer!

Indulgent sweet waffle by Utter Waffle

After working together for years in hospitality (doing both back-of-house and front-of-house jobs), James and Jules decided to launch (now a three-time British Food Award winner) Utter Waffle. Serving up deliciously decadent sweet and savoury waffles (a must try is their banana-topped waffle with peanut butter cream, chocolate and honeycomb), Utter Waffle launched in 2019 from a converted 1975 MK1 Ford Transit (aka Reggie the Waffle Van) and now has a permanent restaurant in Brixton, alongside Reggie, who travels the UK for special occasions (including our Christmas Market on the Mews, of course).

How have you perfected your recipes over time?

We tested recipes for our waffles for months and months, as we wanted to perfect a batter that was entirely gluten-free and super inclusive to all allergies. We now have a really light and crispy batter, which is entirely gluten-free, and we even have a vegan batter.

What’s different about your waffles?

Our waffles are entirely gluten-free, unique and different to the waffles people know. We take sophisticated flavours and combine them with homemade creams, compotes and crumbs to create life-changing gluten-free waffles. Utter Waffle was even voted The Best Dessert in the UK at The British Street Food Awards 2019.

What are you looking forward to most at the Selfridges Christmas Market?

Selfridges has such a magical Christmas spirit. We can’t wait to be part of Christmas on Oxford Street and trade with some other great traders! And, of course, bring our life-changing waffles to Selfridges.

Looking for some delicious treats to take home?

Our very own (and palm oil-free) Selfridges Selection Christmas range is also making an appearance on the Market on the Mews. Stock up on extraordinary and exclusive festive flavours (think salted caramel panettone and nine-month-matured Christmas pudding), made by the best artisan makers out there.
