Ah, the Bobal variety, AKA the grape behind the Las Cañadas. Native to southeast Spain (more specifically Valencia), it’s what gives this rosé wine its deep hue. Once picked, it spends seven months in French oak barrels before being bottled (without filtering or stabilising, by the way). Expect freshness and fruitiness to hit your palate before tucking into an aperitif, or two.
